Peleg aims to achieve the utmost visual clarity, perfection, and uniformity between the idea and the form in order to convey my concept as accurately as possible in her work. By using the fewest means possible, she expresses the maximum in her work. It is not simple to be simple.
The subject of many of her works is language, a major factor in human phenomena, and has great influence over how ideas are formed and fixed. Language is often used as a starting point, and the meaning of words and their inversions are often wondered about.

By using language or images, she deconstructs models and systems within the consensus while giving them a new, defiant interpretation. Beyond the visual aspect, it is essential to her that the work offers a statement or attitude about human existence, such as sustainability, consumerism, and stupidity fixed in automatic structures or embedded practices.
In Peleg's work, he meditates on self-evident (obvious/taken for granted) social determinations and the seeming order that disrupts our lives.

בעבודותיה מנסה אפרת פלג להגיע לכדי שלמות ויזואלית ואחידות בין הרעיון והצורה, כדי להביע בדיוק רב את המסר אותו רוצה להעביר. פלג מנסה ל'הגיד' כמה שיותר בכמה שפחות אמצעים, ונוכחת לדעת שלא פשוט להיות פשוט.
רבות מעבודותיה עוסקות בשפה, לשפה יש השפעה רבה על האופן שבו נוצרים ומתקבעים רעיונות. יש הרבה התייחסות לשפה כנקודת מוצא, תהייה על משמעות של מילים והיפוכן.
גם באמצעות השפה וגם באמצעים חזותיים פלג מפרקת מבנים או מערכות שנמצאים בקונצנזוס, תוך מתן פרשנות חדשה ולעיתים מתריסה. מעבר לצד הויזואלי, לפלג חשוב שהעבודה תבטא אמירה או עמדה כלפי מצב הקיום האנושי, בכל מיני היבטים. כמו קיימות, צרכנות, וטיפשות שקבועה במבנים אוטומטיים או בתהליכים ומנהגים מושרשים. בעבודותיה מבקשת פלג להרהר אחרי קביעות חברתיות מובנות מאליהן ואחרי הסדר-לכאורה שבעצם משבש את חיינו.
